How to make Leftover BBQ Chicken Salad using leftovers from the night before.

One of the biggest expenses for a household is eating out with the family. If done on a regular basis (say 1-2 times a week) you can spend upwards of $100 a week. This is money that can be easily saved by eating out on rare or special occasions and making more meals at home. This approach can be taken even a step further with the use of leftovers from the night before. Today’s frugal food tip comes with the aid of some leftover BBQ chicken from the night before.

Delicious Leftover BBQ Chicken Salad

Ingredients used:

3 Tomatoes
1 Head of organic romaine lettuce (rinsed)
3 Hard boiled eggs sliced
1 Small bunch of arugula
1 Carrot julienned
1 Zucchini sliced


Prepare all of the ingredients as you would normally with any other salad.  Slice and dice the veggies to your hearts content and finish it off with the shredded BBQ chicken on top. You can either mix the dressing into the salad before hand, or drizzle some on top of the salad, either way it’s delicious. This recipe will serve about four and makes a great healthy alternative to eating out and costs a lot less!
